What's Faster Than Skyline Chili!?

Okay. Okay. I know the idea of my blog "Quick Dinner" was to blog about dinners I created quickly. This is a bit of a cheat but I couldn't resist. We lived in Cincinnati a lifetime ago. Our favorite Cincinnati food is Skyline Chili. Recently, I was in Cincy and had to have a meal at Skyline. The top dish is what is known as a three-way--spaghetti, chili, cheese. A four-way and five-way will include kidney beans and/or onions. Always served with Skyline is a bowl of oyster crackers. A Skyline meal is not complete without cheese coneys--a mini hot dog in a bun topped with chili, cheese, mustard and onion!

Not So Fast Spaghetti and Meatballs from the NYT

I spent an afternoon creating two recipes which appear in the New York Times. The recipes were for The Zappa Family Spahetti Sauce and Meatballs.

There was nothing too hard and the biggest time user was the 2.5 hours simmering. But that doesn't take any effort on my part and fills the house with wonderful smells.

Fast Comfort Cookies---It's That Time of Year

It's that time of year again. Girl Scout Cookies. What can be quicker than purchasing a box or two of cookies from your local girl scouts when you are needing a dose of cookie nostalgia?

Some of my friends are moms of Girl Scouts and are my suppliers of the sweet delicacies I anticipate this time of year. I am patiently waiting for my delivery of Thin Mints, Trefoils and Somoas.

A moment to remember my own cookie days:

Having been a Girl Scout in Bedford, Ohio, I remember picking up my cookies from the cookie chairperson. The carrier box was brown cardboard and cleverly designed so that an assortment of the cookies fit inside and the top of the box formed a carrying handle. This was a time when the girls actually sold the cookies door to door so carrying the product was important to the success of the scout.

The day I picked up the box was a snowy day. I remember carrying the brown box with green printing home through the snow and the early darkness of winter. The flakes with the large, wet kind and they easily covered my hat, shoulders of my coat and the top of the box.

Here I am preparing a meal at Christmas. The meal included turkey but was made quick by using only the turkey breast.

French Onion Soup with Help from Frontier Soups

I purchased this Frontier Soup soup mix at a charity fundraiser in the fall and decided last night to create my own Chicago Bistro French Onion Soup. I sauteed my own onion sliced thinly in three tablespoons of butter.Then I added the soup mix and six cups of beef broth. Cooking time was roughly 40 minutes. It was a favorful soup, but really didn't remind me of classic French onion soup.
